This is our Sunday morning breakfast special.
I actually make the same for both me and Charlie, the only difference is that I put salt on my part.
You can substitute any vegetables you like for the spinach. Peas, broccoli, or squash would be delicious.
Makes 3-6 servings
4 medium eggs
2 medium egg whites
1 cup plain yoghurt
1 cup cottage cheese
1/3 cup steamed spinach
1/2 cup diced cooked potatoes
1 teaspoon butter, for greasing the pan
1.Preheat oven to 350 degrees.
2.In a bowl beat together eggs, egg whites, yoghurt and cottage cheese.
Stir in spinach and potatoes.
Pour into a 9x13 inch greased pan.
3.Bake for about 20 minutes, or until the frittata is firm.
4.Cool, cut into squares and serve.
Store leftovers in a sealed container and refrigerate.
