Beef and sweet potato stew




Beef and sweet potato stew
My dog just loves sweet potatoes, her tail always waggle extra when that ingredient is in her dog bowl.
You can make a large pot of stew and freeze serving sized amounts for later use.
Charlie loves beef, but you can substitute chicken, pork or lamb if you prefere.

Makes 3-6 servings

2 cups diced sweet potato
1 cup mini carrots
1 cup broccoli
2 cups diced beef
1 tablespoon vegetable oil
1/3 cup chicken stock
1/2 teaspoon dried oregano

1.Bring 4 cups of water to a boil in a large pot.
Add the sweet potatoes and let them cook over medium heat for 5 minutes.
Add carrots and broccoli and cook for another 4 minutes,
.Drain.
2.Heat the oil in a pan and sauté the beef until golden on all sides, about 6 minutes.
Turn of the heat and let cool.
3.In a large pot, mix together the vegetables, beef and stock and oregano.
4.Let it cool and serve.
